DESCRIPTION:
The soba noodles are made from 100% domestically sourced buckwheat flour and natural spring water, which comes in two varieties: "Nihachi" and "Juwari" for an additional 100 yen. The noodles are pale, thin, and fresh, served with a Kanto-style dipping sauce. There is both table seating and traditional tatami mats.

Along with set lunch meals, the restaurant also offers a wide ranging menu item. There are both hot and colod soba dishes along with side dishes like deep-fried sweet shrimp and chilled tofu, Japanese sake and shochu that pair well with soba are also available making it a great place to enjoy a drink with your meal.

DESCRIPTION:
Kaeruan specializes in Kirishita Soba which is cultivated from late August to mid-October. It is grown in highland areas at the foot of mountains where there is a significant temperature difference between day and night, and morning fog is common. The fog prevents the crop from succumbing to frost, resulting in high-quality buckwheat.
MENU DETAILS:
Kaeruan exclusively uses Kiko-uchi; soba made with 100% buckwheat flour, without using any binding agents like wheat flour. This creates a rich aroma and refreshing texture. The attention to detail extends to the locally produced sake on offer, too. The owner personally tastes and selects the recommended sake and brands for each year.

DESCRIPTION:
The “iki” in their name means “stylish” and they strive daily to fill their offerings with the essence of “iki" always being conscious of better freshness, better service, and better quality, hoping to bring joy to many customers. The noodles are freshly cut every morning and boiled them to match the timing of our customers' visits. Tempura is also fried only after receiving an order. The broth is made using dried sardines and kelp, soaked in water.

Sigenoi is a veritable hidden gem, serving traditional hand-kneaded noodles which take 6 hours to make. They have been in business for 50 years and area a firm favorite among the local community.
MENU DETAILS:
The broth is made from natural ingredients, including kombu (kelp), bonito, and dried shiitake mushrooms. The noodles are boiled fresh upon receiving an order, so you'll have to wait about 10 minutes to receive your order.
